Simnel Cup cakes and Easter Rocky Roads

 Ive been playing with ideas for Easter themed cakes and one Easter cake sprigs to mind, Simnal cake. For those of you who are not familiar with this rich cake it is simply a fruit cake with an almond paste or marzipan topping, the almond flavour compliments the heavy fruit sponge very well and is quite moreish.  This cake is decorated with 11 round balls of almond paste which is believed to represent the 12 apostles minus Judas.
 Traditionally a large cake i decided to make smaller cupcake sized ones using  a recipe from the BBC FOOD website below.

I think that smaller individual cakes look better and of course the kids can decorate their own.

The other idea is a simple Rocky road , Kids love these and they are a great way to get your kids to eat fruit and nuts, this is a great source of fuel for the kids.
For the Rocky Roads its simply a collection of ingredients bound in chocolate, traditionally using broken meringue , however i prefer using marshmallows for a less crunchy texture. I decided to use ..

• Mixed dried fruit
• Mini marshmallow's
• Broken pieces of chocolate brownie
• Mini chocolate eggs
• Milk chocolate
• Orange and lemon zest
